Unlike the traditional method, used for crémants, the ancestral method consists of bottling the wine, while the alcoholic fermentation of the must is not completed.
This process gives pleasant sparkling wines, low in alcohol but sweet. Nothing to do with the unique, surprisingly fresh and fruity red offered by Kathleen Van den Berghe, the Belgian winemaker who has been living in Château de Minière since 2010, near Saint-Nicolas-de-Bourgueil in the Loire.
From this artisanal technique, this passionate about good lambruscos, these “frizzante” Italian wines, has developed a personal method.
It proceeds to a second fermentation and a dosage with grape juice from the estate. By thus limiting the contribution of added sugar (less than 10 g / l just to round off the tannins), the wine keeps all its freshness.
Vinified from 100% organically grown Cabernet Franc, this brut sparkling wine, dark ruby in color, exudes aromas of small red fruits, blackcurrant and raspberries. Supple in attack, its balanced mouth leaves a finish on spicy notes.
You will undoubtedly find other sparkling reds, but rarely so dry and with such a dark color. Enjoy it as an aperitif or with chocolate desserts, or even with a galette des rois for latecomers. Serve at 8 °.
