☞Today’s health = In the summer, there are people who do not eat raw seafood like sashimi as much as possible for fear of getting sick. Surprisingly, seafood is not the main culprit of food poisoning. The main cause of food poisoning in summer is eating raw vegetables.

According to the ‘Status of Pathogenic E. coli Food Poisoning Occurrences’ announced by the Ministry of Food and Drug Safety, vegetables were the most common cause of pathogenic E. coli food poisoning patients in the past 5 years, accounting for 67% (3,034 people). Next, 457 people (10%) of complex cooked foods such as lunch boxes. Meat was followed by 202 people (4%) and seafood with 175 people (4%).

The reason you get food poisoning by eating raw vegetables is because of pathogenic E. coli. In summer when the temperature reaches 35 degrees Celsius, one pathogenic E. coli can multiply up to 1 million in 2 hours. Unlike meat and seafood, vegetables are often eaten raw and are susceptible to E. coli infection. Vegetables are easily contaminated with pathogenic E. coli if they are used for agricultural purposes without purifying groundwater or river water containing feces and livestock wastewater, or if left at room temperature for a long time after washing.

To prevent food poisoning, you should soak vegetables in chlorine disinfectant solution (100ppm) or vinegar solution for at least 5 minutes, then wash them thoroughly in clean water at least 3 times before eating. If microscopic suction occurs during the vegetable washing process, food poisoning bacteria can more easily inhabit. Vegetables should be eaten immediately after washing. It is also not good to wash lettuce and spinach once and store them in the refrigerator for a few days. It is safe to eat salads prepared as simple meals by soaking them in vinegar water and then washing them cleanly.

When infected with pathogenic E. coli, symptoms such as abdominal pain, vomiting, diarrhea, and fever appear within a few hours, and in severe cases, convulsions may occur. Diarrhea and vomiting may cause dehydration, so drink boiled water from time to time to hydrate and replenish sugar and electrolytes with ionic drinks.
