This coming Sunday, June 3, is World Cider Day and Calle Gascona, in Oviedo, will fill up for the traditional tasting of the first ciders of the season. It is the twenty-third edition of the Preba, an event organized for the first time in 2000 by the hoteliers association of Bulevar de la Sidra. This 2023, 19 cider factories are participating, which will place the booths along the route so that the participants can taste the cider ‘culines’.
Escanciar cider, an art
Pouring the cider seems like an easy practice, but it is not. One arm high above the head, tilting the bottle, and the other below the waist supporting the arm. The technique is created to shake, aerate the broth and activate the carbonic gas, which has a temporary effect, and becomes the best way to drink the cider, freshly poured and in small quantities, since the aroma is at its point and volatilizes some of the acetic acid.
Before pouring cider, it is important to practice with water at first. Fill an empty cider bottle with water and find a place where it doesn’t matter if the water falls, such as outdoors or, if there is no alternative, in the shower.
Once you’ve practiced enough and think you’re ready to pour, it’s time to switch from water to cider. However, on many occasions we do not have a pourer, but there is a way to make one in less than a minute and manually, such as explains the user Holiday Asturias on his Youtube channel.
1. Cut the bottle cork in half, leaving the bottom, that is, without breaking it completely.
2. Cut through the bottom and remove one of the halves.
3. Lay the cork on the table and cut it at an angle to make the vent
4. Put the stopper on the bottle and you can pour the cider by serving a culin in a glass.

How to pour cider? Some tips to perfect the technique
Pouring cider isn’t always easy. The first thing to do is take the bottle of cider with your right hand and take the glass with your left, embracing it with your thumb and index finger and, at the base, your middle finger. You have to stretch the arm with which you hold the glass downwards and towards the center, below the waist.
The next step is to place the bottle. Little finger at the base, thumb at the bottom and the remaining fingers at the top, placing the bottle horizontally, finally raising the arm that holds the bottle. Once these steps have been followed, it is time to pour by tilting the bottle so that the liquid falls. The glass also has to be tilted so that the cider hits the rim. And that’s it, now all that remains is to taste and enjoy the poured cider.
