Balkan cuisine is famous for its emphasis on domestic ingredients and simplicity of preparation. Surely each of us who visited the Balkan countries has tasted one of the specialties. For many, seafood and well-processed fish are among the greatest delicacies. The unique opportunity to taste fresh sea fish leaves almost no one tempted.
Today I will try to bring you closer to the magic of Balkan cuisine from my personal experience, as I had the opportunity to look into the recipes of the old settlers themselves and experienced cooks. We will move specifically on the culinary waves of South Dalmatia.
Perhaps you have already encountered the hospitality of these lovely foodies during your holiday. As a guest you will receive a welcome a glass of homemade red wine or just a proper shot brandy. Most households will allow you to taste their own production, as few people buy these products. Sometimes you even get to taste the grapes themselves, from which this delicious drink of kings is still made.
It is never missing from the table prosciutto (well smoked with an unmistakable taste), slices of homemade cheese and olives. Sometimes pickled peppers and onions are also added.
We find well-known names on restaurant menus čevapčiči with potatoes. Among the delicacies are mussel risotto and grilled fish. Most fish are prepared in the same way – they are marinated in olive oil, sprinkled with veda, and the inside of the fish is filled with salt and garlic. Natural spices based on our rosemary are also added to the marinade. I have come across such a recipe most often.
If you don’t want to travel abroad for Balkan cuisine, I recommend trying the Singidunum restaurant in Prague. The owner is a native Serb, so he knows exactly how such a kitchen should look. The restaurant regularly hosts special evenings, including evenings with live music. The food is really first class and the service is very nice. Anyway, try it yourself.
