- 2 courgettes
- 4 eggs
- 100 g of “fine bacon” or lardons
- 1 goat cheese
- 20 cl heavy cream

Preparation time: 20 minutes
Cooking time : 20 minutes
Preheat the oven to 230°C.
Peel the carrots – but leave the skin on the courgettes – and wash the vegetables.
Grate the vegetables and brown them in a pan for about 5 minutes. Season at the end of cooking.
Meanwhile, beat the 4 eggs, the fresh cream and the flour.
Stir in the bacon, nutmeg, Espelette pepper, salt & pepper.
Add the sautéed vegetables to this mixture.
Fill 4 ramekins.
Slice the goat cheese into 4, then place a slice in the center of each ramekin.
Sprinkle the slice of goat cheese with paprika.
Place in the hot oven for about 15 minutes.
