A tasty velouté recipe with button mushrooms to whet your appetite. To do all year round!

Creamy button mushroom velout

List of ingredients

Preparation time: 20 minutes

Cooking time : 15 minutes


Gently heat the vegetable broth.

Peel and finely chop the garlic clove and the shallot.

Chop the chives.

Brush the mushrooms, cool the stems and cut them into strips.

Heat 30 g of butter in a frying pan.

Add the mushrooms.

Brown them for 5 minutes over high heat.

Meanwhile, melt 20 g butter in a saucepan.

Brown the garlic and the shallot for 2 minutes (without colouring).

Add the sifted flour.


Gradually add the broth, while stirring, until thickened.

Beat the egg yolk with the cream and pour everything into the broth.


Add the mushrooms and put everything back on low heat.

Toast stale bread in a pan or toaster.

Serve with croutons and chives.

Tips for a successful recipe

Washing the mushrooms makes them gooey. Just brush them off.
