- 2 spoons of olive oil
- 230 g of chopped champignons or portobello mushrooms
- 1 medium onion, chopped
- 3 cloves of garlic, chopped
- About 400 g of beef (clean meat)
- 2 cups of beef broth
- Water
- A little more chopped mushrooms – about 1 cup (optional)
- 1/2 cup carrots, cut into rings
- 1 teaspoon of dried thyme
- 1 cup of barley
- Pepper
- Chopped parsley for garnish
Pour the oil into a larger pan (with a thicker bottom), then put it on the stove at a medium temperature. Sauté the pieces of beef, red onion and garlic until they are lightly browned.
Add 1 cup of broth, stir, then add chopped mushrooms. Pour in the second cup of broth and add the thyme. Add water (to cover everything or a little more, make sure it doesn’t boil). Leave to simmer covered. Be careful not to boil. Let the broth cook until the beef is tender. Add water if necessary.
Add the barley, more mushrooms (if using) and carrots. Let it cook until the barley is fully cooked. You will need to add water or broth (optional).
Add salt, if necessary and pepper as desired. When the soup is ready, serve it warm and sprinkle each plate with a little chopped parsley.
